
Sushi restaurants are popping up every where and sushi can be found in grocery stores and I even saw it in a 7/11 (I didn’t buy it, but I did see it). The odd thing is that we think we are eating traditional Japanese food, but in reality the sushi that we know and love is not your typical Japanese sushi and while many Americans frequent their favorite sushi restaurant regularly, in Japan it is a special occasion kind of meal.
Sushi was first introduced in the late 1950’s, but it didn’t take off until the late 70s and 80s with the introduction of the California Roll, followed by other specialty rolls. Now we rate sushi restaurants on the creativity of their specialty rolls. These rolls often have cooked fish, sauces, vegetables and other elements that you would not until recently find in Japanese sushi restaurants, but we love our sushi and West Hills has some great spots.
